I got this amazing recipe from the wonderful recipe archive at Peapod.com.
Penne with Sun-dried Tomato Sauce
- 1 tablespoon olive oil
- 4 cloves of garlic, finely chopped
- 1 cup sun-dried tomatoes, drained and chopped
- 1 cup whipping cream
- 1 7-ounce jar roasted red peppers, drained, chopped
- 1/2 teaspoon crushed red pepper
- 1/2 cup fresh basil, chopped
- 1 pound penne pasta
- 1 cup freshly grated Parmesan cheese
Heat oil in saucepan over medium heat. Add garlic; saut? 1 minute. Add tomatoes, cream, red peppers and crushed red pepper; simmer approximately 2 minutes. Stir in basil and simmer 1 minute longer. Meanwhile, cook pasta per package instructions. Drain, reserving ? cup liquid from pasta. Return pasta to pot. Add sauce and cheese. Toss to coat. If dry, add reserved cooking liquid to moisten. Season with salt and pepper. Serve.
